The production of heat sterilization jelly requires heating sterilization after cup filling and rapid cooling. There are two methods for heat sterilization: boiling sterilization and retort sterilization, with boiling sterilization being the more commonly used method. ■ Example of heat sterilization after filling fruit jelly 80-85°C for 30 minutes of hot water sterilization → After sterilization, cool as quickly as possible. In continuous models, after boiling sterilization (hot water sterilization), the jelly is quickly transported to the chiller tank via conveyor to minimize additional heating of the jelly.
